In 1805 (the date on the label), Henri-Louis Pernod established The Maison Pernod Fils distillery in Pontarlier to produce Pernod Absinthe. This modern day Pernod Absinthe is made using an interpretation of his 19th Century recipe at the historic Caves Byrrh Distillery using Pontarlier wormwood. Sampled on 16/02/2016.
